With us, the name stands for the house. The Sauschneider have a long tradition in the Lungau. Since the area has always been rather poor, the farmers were looking for a sideline. This they found in "cattle castrating". So they moved to many districts in Austria and even further. Everyone was assigned a district in which he could practice his craft: the so-called "Gäu". In this way, the Lungau sauté cutters came as far as Bohemia, Moravia, Hungary or Saxony. Even Empress Maria Theresia (at that time Salzburg was still an archbishopric and not part of Austria) could not erase this privilege of the farmers.

Today the profession is dying out. There are only a handful of people in Lungau who still actively practice this profession.

The Sauschneiders also brought prosperity and above all innovations to the Lungau. Farmers who often stayed for months in foreign countries brought new methods and machines for agriculture. And were so respected personalities.
